Tricks for a perfect paella

As any Valencian will tell you... don't even think about touching the rice in a paella during cooking! This way we prevent the starch from separating from the grain and creating a rice mass. 🥘
In addition, it is much better to use only water instead of broth , as in the usual recipe. At the end of the day, we want rice to be the protagonist. We also don't want to camouflage it with too many ingredients or very strong spices, better to fall short than overdo it.
And above all, don't even think about skipping the resting time after preparing it so that the rice is ready and you have a spectacular dish!
